An integral tool of every barista is a tamper or coffee press (coffee rammer). When making espresso, squeezing the coffee in the lever is really important. If you squeeze the coffee with less force, the water will flow through the coffee too fast. Conversely, if you press the coffee harder, the water will flow too slowly. We definitely recommend hand-held metal coffee tampers, heavy. Working with them is very pleasant.
